Baker's One Bowl Death by Chocolate Cookies
2 packages (16 squares) Baker's Semi-Sweet
Baking Chocolate, divided
3/4 cup firmly packed brown sugar
1/4 cup butter or margarine
2 eggs
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon Calumet? Baking Powder
2 cups chopped nuts (optional) Macadamia nuts, I recommend them
Preheat oven to 350 degrees F. Coarsely chop 8 squares (1 package) of the chocolate; (or substitute Ghirardelli 60% cacao chips) set aside.
Microwave remaining 8 squares chocolate in large microwaveable bowl on HIGH for 1 to 2 minutes. Stir until chocolate is melted and smooth. Stir in sugar, butter, eggs and vanilla extract. Stir in flour and baking powder. Stir in reserved chopped chocolate and nuts. Drop by 1/4 cupsful onto ungreased cookie sheet. Leave enough space between, cookies will spread out 3 - 4". Bake for 12 to 13 minutes or until cookies are puffed and feel set to the touch. Cool on cookie sheet for 1 minute. Transfer to wire rack to cool completely.
Makes about 1 1/2 dozen cookies
EDIT: There is no pineapple juice in this recipe - deal with it.

PERFECT PRIME RIB EVERYTIME
prime rib roast with or without bone (any size)
bottom round center cut
Preheat oven to 550°F degrees.
Make a rub of salt, pepper and garlic powder and apply to meat. Place meat in a shallow roasting pan fat side up.
Roast at 550°F at 5 minutes per pound for RARE, or 6 minutes per pound for MEDIUM and 7 minutes per pound for WELL DONE.
Turn off oven at the end of cooking time and DO NOT OPEN OVEN DOOR FOR TWO HOURS.
At the end of the 2 hours, remove meat from oven to slice; it comes out perfect everytime.
Works the same with Roast beef. The next time you want an easy hands-off, tender and juicy roast, try this recipe - you won't be disappointed!

So you might be wondering why I have so much time to hang out here today, call the EC store guy, and so on. That's because I'm cooking baby back ribs in the crock pot.
Por que?1??
Rinse the slabs (my crock pot can hold two) and carefully rinse off bone chips and saw dust. Pat dry. Apply your rub. If you use sauce hold off for now.
Spray the inside of the crock pot with nonstick spray. Cut the slabs into two or three rib portions. Place the ribs on the bony end standing/leaning against each other.
Cook on low for 6 hours.
At the end of cooking time place on a rack, slather your sauce and broil for a few minutes, or just bake at 350 for 20 minutes.
Fall off the bone tender and delicious.
Baked sliced and lightly spiced Granny Smith apples for dessert.
Edit for Unky - give the pineapple juice to the kids.

Sounds scrumptious! When do you add the pineapple juice?
